Ingredients

  • 2 Tbsp. butter
  • 1 c. cold mashed potatoes
  • 1 1/2 c. sugar
  • 3 beaten eggs
  • 1 c. milk
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 3 heaping tsp. baking powder
  • 3 c. flour

Instructions

  1. Cream the butter, mashed potatoes, and sugar together.
  2. Add the beaten eggs, milk, nutmeg, and vanilla to the mixture.
  3. Sift the baking powder with the flour.
  4. Stir the dry ingredients into the wet mixture and add more flour to form a soft dough.
  5. Roll the dough to 1/4-inch thickness, cut into desired shapes, and deep-fry until golden brown.
  6. Drain the donuts on paper towels.
  7. Roll the donuts in confectioners' sugar before serving.
