Ingredients

  • 1 cup Sugar
  • 1 2/3 cups Flour
  • 1/3 cup Yellow Corn Meal
  • 2 1/4 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1 Egg, well beaten
  • 1 cup Milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine sugar, flour, corn meal, baking powder, baking soda, nutmeg, cinnamon, and salt.
  3. Add the beaten egg and milk to the dry ingredients and mix well until all ingredients are thoroughly combined.
  4. Pour the batter into greased or lined muffin tins, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 15 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from oven and let cool slightly before serving.
