Calico Squash Casserole

Ingredients
- 1 lb. yellow squash, sliced ⓘ
- 1/2 lb. zucchini, sliced ⓘ
- 1 c. water ⓘ
- 1/2 c. chopped onion ⓘ
- 1/4 c. chopped green pepper ⓘ
- 3 Tbsp. chopped green onions
- 1/4 c. butter or margarine, melted and divided ⓘ
- 1 c. herb-seasoned stuffing mix ⓘ
- 1 (10 3/4 oz.) can cream of chicken soup, undiluted ⓘ
- 1 (8 oz.) can water chestnuts, drained and chopped
- 1/2 c. plain low-fat yogurt ⓘ
- 1/4 c. chopped pimento ⓘ
- 1 large carrot, grated ⓘ
- 1/2 tsp. salt ⓘ
Instructions
- Combine water, sliced yellow squash, and sliced zucchini in a medium saucepan.
- Bring to a boil, cover, and simmer for 8 minutes or until vegetables are tender; drain.
- Sauté chopped onion, chopped green pepper, and chopped green onions in 1 tablespoon of melted butter until tender; set aside.
