Ingredients

  • 3 boxes dates (8 oz. each)
  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 8 cups pecans
  • 1 teaspoon cinnamon
  • 4 eggs
  • 1/2 teaspoon cloves (optional)
  • 1/2 to 3/4 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup sugar

Instructions

  1. Sift together flour, salt, baking powder, cinnamon, cloves (if using), and nutmeg (if using) into a large bowl.
  2. Chop dates and pineapple into coarse pieces. Add whole candied cherries and mix all fruit with the flour mixture, distributing the fruit evenly.
  3. Beat eggs with sugar until well combined. Add the egg mixture to the fruit and flour mixture, mixing with hands to combine thoroughly.
  4. Add whole pecans and continue mixing until nuts are evenly distributed throughout the batter.
