Caramel Nut Chocolates

Ingredients

  • 4 1/2 tbsp butter
  • 1/2 cup granulated sugar
  • 1 tbsp honey
  • 1 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 1/2 cup unsalted peanuts, chopped coarsely
  • 1/3 cup ground hazelnuts or almonds
  • 5.5 oz dark chocolate, 3.5 oz chopped, 2 oz melted
  • 1 tbsp vegetable shortening
  • None None red sugar decorations (optional)

Instructions

  1. Melt butter, sugar and honey, stirring constantly, over low heat until sugar dissolves. Add condensed milk and bring to a boil. Reduce heat and cook, stirring constantly, for about 6 mins, or until mixture caramelizes. Remove from heat and add vanilla, peanuts and hazelnuts. Transfer to a heatproof bowl and let cool for about 10 mins.
  2. Shape into balls, each around 1 rounded teaspoon. Transfer to a tray and chill until firm.
  3. Melt chopped chocolate and vegetable shortening over a double boiler until melted. Dip chilled balls in chocolate mixture using a fork or skewer, gently drain excess chocolate then carefully transfer to a tray lined with foil or parchment paper. Chill until set.
  4. Drizzle melted chocolate decoratively over top of balls and decorate with red sugar decorations, if desired. Chill until set then serve.
