Ingredients

  • 1 cup self-rising flour
  • 1/4 cup packed brown sugar
  • 2 beaten eggs
  • 1 cup finely shredded carrots
  • 1/4 cup cooking oil
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Grease 8 muffin cups or line with paper bake cups.
  2. In a mixing bowl, combine self-rising flour and brown sugar.
  3. Add the beaten eggs, shredded carrots, cooking oil, and lemon juice to the dry ingredients.
  4. Mix until just combined.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from oven and let cool slightly before serving.
