Ingredients

  • 1 cup flour
  • 3/4 cup whole wheat flour
  • 1/2 cup oatmeal
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup raisins
  • 1 Tbsp grated orange rind
  • 1 cup grated carrots
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine flour, whole wheat flour, oatmeal, sugar, baking powder, baking soda, and raisins.
  3. Add grated orange rind and grated carrots to the dry ingredients and mix well.
  4. In a separate bowl, beat the egg and then stir in orange juice and oil.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Divide the batter evenly among muffin cups lined with paper liners or greased.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the muffin tin and serving.
