Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 cups sugar
  • pinch of nutmeg
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1 1/2 cups oil
  • 3 cups grated carrots
  • 1 cup walnuts

Instructions

  1. Mix together the dry ingredients and set aside.
  2. Beat the eggs and add the oil.
  3. Combine the dry ingredients with the egg mixture.
  4. Fold in the grated carrots and walnuts.
  5. Pour the batter into a sprayed jelly roll or sheet cake pan.
  6. Bake at 350°F for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  7. Cool the cake before frosting with Cream Cheese Frosting.
