Carrot Tea Loaf
A moist, flavorful carrot tea loaf with nuts and cinnamon, perfect for teatime or as a wholesome snack for those who enjoy sweet, nutty baked treats.

- Preheat oven to 350°F (175°C).
- Spray a loaf pan with non-stick spray or line it with parchment paper.
- In a large mixing bowl, combine all-purpose flour, nonfat dry milk, coarsely chopped nuts, Sugar Twin, baking soda, cinnamon, and salt. Blend well.
- Add eggs, shredded carrots, vegetable oil, and vanilla flavoring to the dry ingredients.
- Stir until just combined; the batter will be very thick.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for approximately 1 hour, or until the loaf is golden brown and a toothpick inserted in the center comes out clean.
- Remove from oven and turn the loaf out onto a rack to cool.
