Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup nonfat dry milk
  • 1/2 cup coarsely chopped nuts
  • 1/3 cup Sugar Twin
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 2 cups shredded or grated carrots
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla flavoring

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a loaf pan with non-stick spray or line it with parchment paper.
  3. In a large mixing bowl, combine all-purpose flour, nonfat dry milk, coarsely chopped nuts, Sugar Twin, baking soda, cinnamon, and salt. Blend well.
  4. Add eggs, shredded carrots, vegetable oil, and vanilla flavoring to the dry ingredients.
  5. Stir until just combined; the batter will be very thick.
  6. Pour the batter into the prepared loaf pan, spreading evenly.
  7. Bake for approximately 1 hour, or until the loaf is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from oven and turn the loaf out onto a rack to cool.
