Creamy, savory cashew hot dish combines hamburger, mushrooms, olives, and melted cheese, topped with crispy chow mein noodles and cashews for a hearty, comforting meal.

Ingredients

  • 2 lb. hamburger
  • 1 small diced onion
  • 4 oz. can mushrooms
  • 1/2 c. sliced ripe olives
  • 1/2 lb. American cheese
  • chow mein noodles
  • 2 c. mushroom soup
  • 1/2 c. sour cream
  • 2 Tbsp. cooking sherry or wine
  • 8 oz. flat noodles, cooked
  • cashews

Instructions

  1. Brown the hamburger and diced onion in a skillet. Drain the grease.
  2. In a saucepan, heat the mushrooms, sliced olives, American cheese, mushroom soup, sour cream, and cooking sherry until the cheese melts and the sauce is well combined.
  3. Grease a 9 x 13-inch baking pan. Add the cooked hamburger mixture and all ingredients except the chow mein noodles and cashews.
  4. Bake uncovered at 325°F (163°C) for 45 minutes.
  5. During the last 10 minutes of baking, top the casserole with chow mein noodles and cashews, then return to the oven to finish cooking.
