Ingredients

  • 1 medium head cauliflower
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1 c. milk
  • shredded Cheddar cheese
  • 2 Tbsp. sliced almonds, toasted
  • paprika
  • cooked green beans (optional)

Instructions

  1. Trim leaves from the cauliflower, leaving 1-inch of stem for support.
  2. Place the cauliflower in a Dutch oven.
  3. Add hot water that covers the stem but does not touch the head.
  4. Cover and steam until tender, about 12 to 15 minutes.
  5. While steaming, prepare a cheese sauce by melting butter, stirring in flour and salt, then gradually adding milk to make a smooth sauce.
  6. Add shredded Cheddar cheese to the sauce and stir until melted.
  7. Toast sliced almonds until golden brown.
  8. Remove cauliflower from steamer, drain excess water if necessary.
  9. Pour cheese sauce over the cauliflower, sprinkle with toasted almonds and paprika.
  10. Serve hot, optionally alongside cooked green beans.
