Celery-Stuffed Flank Steak

Ingredients

  • 2 lb. beef flank
  • 1 c. fresh bread crumbs
  • 3/4 c. diced celery
  • 1 small onion
  • 1/2 tsp. salt
  • 1/8 tsp. thyme leaves
  • water
  • all-purpose flour
  • 1 Tbsp. cornstarch
  • 1/4 tsp. ginger

Instructions

  1. Flatten steak and score diamond shape with knife.
  2. In medium bowl, combine bread crumbs, celery, onion, 1 tablespoon melted butter or oleo, salt, thyme, 1/8 teaspoon pepper and 2 tablespoons water.
  3. Spread evenly on one side of steak, leaving 1-inch border. Roll steak from a long side; secure with toothpicks or string.
