Ingredients

  • 15 lb. chayotes
  • 4 large onions
  • 6 red bell peppers
  • 1 large bunch celery
  • 1 large cauliflower
  • 2 lb. carrots
  • 8 hot peppers
  • 2 Tbsp. mustard seed
  • 2 Tbsp. celery seed
  • 2 tsp. turmeric
  • 1/2 tsp. ground cloves

Instructions

  1. Peel the chayotes.
  2. Chop the chayotes, onions, bell peppers, celery, cauliflower, carrots, and hot peppers, and put them in a large kettle.
  3. Sprinkle 1/2 cup salt over the chopped vegetables.
  4. Mix well and let stand for 3 hours.
  5. Mix the vegetables once or twice during the standing time.
