  • 6 Tbsp butter
  • 2 c sliced mushrooms

  • 2 Tbsp white dinner wine
  • 1 pt sour cream
  • 1 1/2 c grated sharp Cheddar cheese
  • 1/2 to 3/4 lb fresh shrimp
  • 1/2 c chopped green onions

Instructions

  1. Cook macaroni in salted water until tender. Drain well.
  2. Melt butter in a large skillet.
  3. Saute mushrooms until browned well. Stir in curry powder and onion powder.
  4. Add wine to the skillet and cook briefly. Blend sour cream and 1 cup of grated Cheddar cheese into the mixture.
  5. Stir in shrimp and chopped green onions into the sour cream mixture.
  6. Toss drained cooked shrimp lightly with well-drained mushrooms.
  7. Heap the mixture lightly into a 1 1/2-quart casserole.
  8. Sprinkle with the remaining 1/2 cup grated Cheddar cheese.
  9. Bake at 375°F for 25 to 30 minutes until cheese is melted and casserole is bubbly.
