Ingredients

  • 2 lb. zucchini or crookneck squash
  • 1 cup sour cream
  • 2 beaten egg yolks
  • 2 Tbsp. flour
  • 2 stiffly beaten egg whites
  • 1 1/2 cup shredded Cheddar cheese
  • 1/3 cup fine bread crumbs
  • 1 Tbsp. melted butter
  • 4 slices crisp bacon, crumbled and drained
  • salt
  • parsley

Instructions

  1. Cook the squash until tender, about 15 to 20 minutes.
  2. Drain the squash and sprinkle with salt.
  3. Set aside a few slices of squash for garnish.
  4. Mix sour cream, egg yolks, and flour in a bowl.
  5. Fold in the beaten egg whites into the mixture.
  6. In a greased 12 x 7 1/2 x 2-inch baking dish, layer half of the squash, then half of the egg mixture, and sprinkle with half of the cheese.
  7. Repeat the layers with remaining squash, egg mixture, and cheese.
  8. Combine bread crumbs and melted butter, then sprinkle over the top.
  9. Top with crumbled bacon and chopped parsley.
  10. Bake at 350°F for 20 to 25 minutes until golden and bubbly.
