Ingredients

  • 2 c. water
  • 1 (14 oz.) can chicken broth
  • 3 boned and skinned chicken breasts
  • 1/2 c. thinly sliced carrots
  • 1/2 c. thinly sliced celery
  • 1 lb. potatoes
  • 8 oz. sliced mushrooms
  • 1/2 c. thinly sliced green onions
  • 1/4 tsp. thyme
  • salt

Instructions

  1. In a 3-quart saucepan, combine water and chicken broth; bring to a boil.
  2. Cut chicken into 1/2-inch chunks and add to the boiling liquid along with sliced carrots, sliced celery, and cubed potatoes.
  3. Simmer for 10 minutes.
  4. Add sliced mushrooms, sliced green onions, and thyme.
  5. Simmer for an additional 15 to 20 minutes.
  6. Add salt and pepper to taste.
