Creamy and hearty cheese burger soup combines ground beef, potatoes, vegetables, and melted cheese for a comforting meal perfect for family dinners or casual gatherings.

Ingredients

  • 1 lb. ground chuck
  • 1/4 cup celery
  • 1/4 cup carrots
  • 3/4 cup onion
  • 4 Tbsp. butter
  • 1/2 cup milk
  • 1/4 cup flour
  • 10 oz. Velveeta cheese
  • 1 Tbsp. parsley flakes
  • 3 cups chicken broth
  • 4 cups diced potatoes
  • 1/4 cup sour cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Brown and drain the ground chuck.
  2. Finely chop celery, carrots, and onion, then sauté with 2 tablespoons of butter until tender.
  3. Add chicken broth, water, diced potatoes, parsley flakes, and cooked beef. Bring to a boil, then reduce heat.
  4. Cover and simmer until potatoes are tender.
  5. Stir in Velveeta cheese, milk, and sour cream until cheese is melted and the soup is heated through.
  6. Season with salt, pepper, and garlic powder to taste. Serve hot.
