Ingredients

  • 4 potatoes, peeled and sliced
  • 5 carrots, peeled and sliced
  • 1 onion, peeled and sliced
  • 2 c. chicken stock
  • 4 Tbsp. butter
  • 3 Tbsp. flour
  • 2 c. milk
  • 2 c. grated cheese
  • salt
  • pepper

Instructions

  1. Combine potatoes, carrots, onion, and chicken stock in a soup kettle. Simmer, partially covered, for 15 minutes.
  2. Meanwhile, melt butter in a saucepan.
  3. Add flour to the melted butter and stir until blended.
  4. Slowly add milk, stirring with a whisk until smooth.
  5. Stir in grated cheese and cook over low heat until melted.
  6. Season with salt and pepper.
  7. Slowly add the cheese mixture to the vegetables and stock.
  8. Stir over low heat until blended and heated through.
  9. Serve best in bread roll bowls.
