Ingredients

  • 3 lb. flank steaks
  • 1 c. red wine
  • 2 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 2 cloves garlic
  • 1 tsp. oregano
  • 1 c. Cheddar, shredded
  • 2 tsp. Dijon mustard
  • 1 tsp. Worcestershire sauce

Instructions

  1. Combine red wine, olive oil, vinegar, garlic, and oregano in a 9 x 13-inch Pyrex dish.
  2. Add the flank steaks to the marinade.
  3. Marinate in the refrigerator for 24 to 48 hours.
  4. Remove the steaks from the marinade and cook as desired (grilling or broiling recommended).
  5. Preheat oven or grill to the appropriate temperature.
  6. Cook the steaks until desired doneness.
  7. Sprinkle shredded cheddar cheese over the steaks during the last few minutes of cooking to create a cheese crust.
  8. Remove from heat and let rest briefly before serving.
