- Spray a skillet with cooking spray and heat over medium until hot.
- Add minced onion and sauté until tender. Remove from heat.
- In a bowl, combine the cooked onion, crumbled feta cheese, slightly beaten egg, salt, pepper, and nutmeg.
- Cut each sheet of phyllo pastry lengthwise into 2-inch strips.
- Brush one strip with melted butter.
- Place 1 teaspoon of cheese mixture at the base of the buttered phyllo strip.
- Fold the strip like a flag into triangles, covering the filling.
- Place the triangles seam side down on greased cookie sheets.
- Brush the tops with melted butter.
- Bake at 350°F (175°C) for 20 minutes or until golden brown.
