Ingredients

  • 6 chicken breasts
  • 1 tsp. paprika
  • 2 Tbsp. butter
  • 1/4 c. sherry
  • 3/4 c. light cream
  • 1/3 c. Chablis
  • 2 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1 Tbsp. oil
  • 1 tsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1/2 c. Swiss cheese, grated

Instructions

  1. Coat chicken breasts with flour, paprika, and salt.
  2. Brown the chicken in oil and butter, then add sherry.
  3. Cook, covered, until the chicken is tender; then add Chablis and lemon juice.
  4. Blend light cream with cornstarch and add to the pan, stirring until the sauce thickens.
  5. Sprinkle grated Swiss cheese over the chicken and cover the pan until the cheese melts.
  6. Serve the cheese glazed chicken over rice.
