Ingredients

  • 2 medium Russet potatoes
  • 2 medium carrots
  • 1 Tbsp. olive oil
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 large zucchini
  • 1 large red bell pepper
  • 2 cloves garlic
  • 2 cups shredded Cheddar cheese

Instructions

  1. Place chopped potatoes and carrots in a greased 13 x 9-inch baking dish.
  2. Drizzle with olive oil, then sprinkle with basil, oregano, salt, and pepper. Toss lightly to coat.
  3. Bake at 425°F for 20 minutes.
  4. Add zucchini, bell pepper, and minced garlic to the dish.
  5. Stir the vegetables to combine, then return to the oven.
  6. Bake for an additional 20 minutes.
  7. Sprinkle shredded Cheddar cheese over the vegetables and return to the oven for 3 minutes until cheese melts.
