Cheese Tacos

Cheese tacos feature melted cheese, flavorful tomato and chili sauce, and creamy sour cream, perfect for a quick, cheesy, and satisfying Mexican-inspired meal.

Ingredients

  • 1 medium onion, chopped
  • cooking oil
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (4 oz.) can green chili peppers, rinsed, seeded and chopped
  • 1 tsp. dried oregano, crushed
  • 12 (6-inch) tortillas
  • 8 oz. Monterey Jack or Longhorn cheese
  • 1 c. dairy sour cream

Instructions

  1. Cook onion in 2 tablespoons of oil until tender but not brown. Stir in undrained tomatoes, chili peppers, and oregano.
  2. Simmer about 20 minutes until very thick.
  3. In a skillet, dip tortillas in 2 tablespoons of hot oil about 10 seconds or just until limp.
  4. Drain on paper towels.
  5. Cut cheese into about 12 strips.
  6. Place 1 strip of cheese and 2 tablespoons of sauce down the center of each tortilla; overlap edges.
  7. Arrange on a baking sheet seam side up.
  8. Bake, covered, in a 350° F oven for 8 minutes.
  9. Uncover; bake 3 to 4 minutes more.
  10. Open tortillas and add sour cream.
  11. Roll up and serve.
