Cheesy stuffed squash offers a delightful combination of tender squash shells filled with savory bacon, onion, breadcrumbs, and melted cheddar cheese, perfect for a comforting meal.

Ingredients

  • 6 medium squash
  • 1/2 lb bacon
  • 1 small chopped onion
  • paprika
  • 3/4 cup soft bread crumbs
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Wash squash and boil in salted water for 8 to 10 minutes. Drain and cool slightly.
  2. Remove and discard stems from the squash.
  3. Cut squash in half lengthwise and remove the pulp, keeping the shells intact.
  4. Cook bacon in a large skillet until crisp; drain well, reserving 2 tablespoons of bacon drippings in the skillet.
  5. Crumble bacon and set aside.
  6. Saute chopped onion in bacon drippings until tender.
  7. Stir in crumbled bacon, bread crumbs, and squash pulp.
  8. Stuff the mixture into the squash shells and top with shredded cheddar cheese.
  9. Broil for 5 minutes until cheese is melted and bubbly.
  10. Sprinkle with paprika before serving.
