Ingredients

  • 3 slices deli turkey, cut in strips
  • 3 slices boiled deli ham, cut in strips
  • 1/4 cup celery, chopped
  • 1 cup potatoes, cooked, peeled, and diced
  • 1 tablespoon onion, chopped
  • 2 tablespoons green pepper, chopped
  • 2 tablespoons low-fat dressing or Heart-Wise mayonnaise
  • 1/4 teaspoon prepared mustard
  • dash of salt

Instructions

  1. Mix the deli turkey, boiled deli ham, chopped celery, cooked potatoes, chopped onion, and chopped green pepper together in a bowl.
  2. Add low-fat dressing or Heart-Wise mayonnaise, prepared mustard, and a dash of salt to the mixture.
  3. Gently combine all ingredients until evenly coated.
  4. Cover and chill the salad in the refrigerator.
  5. Serve over lettuce and garnish with tomato wedges, olives, sliced mushrooms, and sliced beets.
