Ingredients

  • 8 oz. cream cheese
  • 1 c. butter
  • 1 1/2 c. sugar
  • 1 1/2 tsp. vanilla
  • 4 eggs
  • 2 1/4 c. flour
  • 1 1/2 tsp. baking powder
  • 8 oz. jar maraschino cherries
  • 1/2 c. chopped walnuts

Instructions

  1. Thoroughly blend softened cream cheese, butter, sugar, and vanilla until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Gradually add 2 cups of sifted flour with baking powder, mixing until just combined.
  4. Combine the remaining flour with maraschino cherries and chopped walnuts.
  5. Fold the cherry and walnut mixture into the batter gently.
  6. Grease three coffee cans or loaf pans.
  7. Divide the batter evenly between the prepared cans.
  8. Bake at 325°F (160°C) for one hour or until a toothpick inserted into the center comes out clean.
