- Pound the chicken breasts with a mallet between sheets of wax paper until as thin as possible without mashing.
- Place the chicken breasts in a flat dish and cover with clam juice. Refrigerate for 24 hours, turning occasionally.
- Combine seasoned cracker crumbs and ground blanched almonds in a bowl.
- In a separate bowl, beat the egg with water.
- Dip each chicken breast into the egg mixture, then coat with the cracker crumb and almond mixture.
- In a heavy skillet or electric frypan, melt half butter or margarine with oil, and brown the coated chicken breasts until golden on both sides.
- Serve hot with lemon wedges, parsley, and tartar sauce.
