Ingredients

  • 2 whole chicken breasts (half, skin and bone)
  • 1 (8 oz.) bottle clam juice
  • 1 egg
  • 1 1/2 Tbsp. water
  • 3/4 seasoned cracker crumbs
  • 1/3 c. ground blanched almonds
  • half butter or margarine and oil (to sauté)
  • lemon wedges

Instructions

  1. Pound the chicken breasts with a mallet between sheets of wax paper until as thin as possible without mashing.
  2. Place the chicken breasts in a flat dish and cover with clam juice. Refrigerate for 24 hours, turning occasionally.
  3. Combine seasoned cracker crumbs and ground blanched almonds in a bowl.
  4. In a separate bowl, beat the egg with water.
  5. Dip each chicken breast into the egg mixture, then coat with the cracker crumb and almond mixture.
  6. In a heavy skillet or electric frypan, melt half butter or margarine with oil, and brown the coated chicken breasts until golden on both sides.
  7. Serve hot with lemon wedges, parsley, and tartar sauce.
