Ingredients

  • 1 to 2 lb chicken wings
  • 1 lb smoked sausage
  • 1 lb chopped okra
  • 1 lb shrimp
  • 16 oz can chopped tomatoes
  • 2 large onions
  • 16 oz cans tomato sauce
  • garlic powder
  • seasoned salt
  • crushed red pepper
  • black or white pepper
  • 3 to 4 Tbsp bacon fat

Instructions

  1. In a large pot, combine chicken wings, one onion, seasoned salt, one can of chopped tomatoes, tomato sauce, red pepper, black or white pepper, and enough water to cover the wings. Cook slowly until the chicken is tender.
  2. Saute sausage in a skillet to extract grease; do not brown. Set aside.
  3. Clean and devein shrimp; set aside.
  4. In a large skillet, heat bacon fat, then add okra and onions. Saute until okra is half done.
  5. Add chopped tomatoes, tomato sauce, garlic powder, and seasoned salt to the skillet. Mix well with the chicken and simmer for 15 minutes.
  6. Add sausage and shrimp to the skillet and cook for an additional 2 minutes.
  7. Serve the dish over rice.
