Ingredients

  • 4 large boneless chicken breast halves
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 3 Tbsp. green onions
  • juice of 1/2 lemon
  • 2 Tbsp. wine
  • 3 Tbsp. chopped parsley
  • 2 tsp. Dijon mustard
  • 1/4 c. chicken broth

Instructions

  1. Pound chicken breasts thin.
  2. Sprinkle with salt and pepper.
  3. Heat 1 teaspoon of olive oil and 1 teaspoon of butter in a large skillet.
  4. Cook chicken over high heat for 4 minutes on each side.
  5. Transfer chicken to a warm platter.
  6. Add green onions, lemon juice, wine, parsley, and Dijon mustard to the skillet.
  7. Cook for 15 seconds, stirring constantly.
  8. Whisk in chicken broth.
  9. Stir until the sauce is smooth.
  10. Whisk in remaining butter and olive oil.
  11. Pour sauce over chicken and serve immediately.
