  • 2 Tbsp. brandy (optional)
  • 3 Tbsp. parsley, chopped
  • 2 tsp. Dijon mustard
  • 1/4 c. chicken broth

Instructions

  1. Place chicken breasts between sheets of waxed paper and pound slightly. Sprinkle with salt and pepper.
  2. In a microwave-safe dish, melt butter and mix in olive oil.
  3. Place chicken breasts in the dish, coating both sides.
  4. Microwave on High power for 3 minutes.
  5. Let rest for 1 minute.
  6. Turn chicken breasts over.
  7. Microwave again on High power for 3 minutes until chicken breasts are cooked through, not overcooked.
  8. Set aside.
