Chicken Gamunda features tender deboned chicken coated in a flavorful bread crumb and Parmesan mixture, cooked in a rich mushroom and lemon butter sauce, perfect for elegant dinners.

Ingredients

  • 2 oz butter
  • 1/2 lb sliced mushrooms
  • 2 tsp lemon juice
  • cooking sherry to taste
  • 2 large deboned chicken breasts
  • 2 eggs
  • 2 oz oil
  • bread crumbs
  • Parmesan cheese
  • flour

Instructions

  1. Melt butter in a pan.
  2. Add sliced mushrooms, lemon juice, and cooking sherry; cook until mushrooms are tender.
  3. Beat eggs and oil together in a bowl.
  4. Combine bread crumbs and Parmesan cheese in a separate dish.
  5. Dredge the deboned chicken breasts in flour to coat.
  6. Dip the flour-coated chicken into the egg and oil mixture.
  7. Then dip the chicken into the bread crumbs and Parmesan cheese mixture.
  8. Brown the coated chicken in the mushroom and butter mixture at 350°F (175°C) until golden brown and cooked through.
  9. Top the chicken with cooked mushrooms before serving.
