Ingredients

  • 2 lb. skinned and boned chicken breasts
  • 2 Tbsp. chopped onion
  • 1 1/2 c. fine fresh bread crumbs
  • 1/2 c. heavy cream or milk
  • 3 Tbsp. vegetable oil
  • 5 Tbsp. butter
  • 2 Tbsp. chopped parsley

Instructions

  1. Finely grind chicken breasts in a food processor.
  2. Stir in 1 cup bread crumbs, heavy cream or milk, chopped parsley, chopped onion, salt, and pepper.
  3. Blend the mixture well until combined.
  4. Shape the mixture into burger patties.
  5. Refrigerate the patties for 1 hour to firm up.
  6. Dredge the patties in remaining bread crumbs.
  7. Heat vegetable oil and butter in a skillet.
  8. Cook the burgers until they are cooked through and golden brown.
