Ingredients

  • 2 lb. mushrooms, sliced
  • 2 small onions, chopped
  • 1 c. butter
  • 4 c. chicken broth
  • 2 qt. half and half
  • 4 lb. seafood (scallops, shrimp, crab meat, sea legs, or a combination)

Instructions

  1. Saute mushrooms and onions in butter until tender.
  2. Add enough flour to make a roux and cook briefly.
  3. Slowly add chicken broth, stirring constantly to prevent lumps.
  4. Add the half and half and continue stirring until well combined.
  5. Add precooked seafood to the mixture.
  6. Cook very slowly over low heat, do not boil.
  7. Simmer until the bisque is hot and flavors meld.
