Ingredients

  • 3 chickens (2 lb. each), halved or split
  • 2 cups canned red sour pitted cherries
  • 6 Tbsp. butter
  • 1 Tbsp. flour
  • 1 tsp. sugar
  • 1/8 tsp. ground allspice
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. dry mustard
  • 1 cup crushed pineapple
  • 2 Tbsp. dark rum or 1 Tbsp. rum extract
  • 1 chicken bouillon cube
  • 1/4 tsp. red food coloring
  • paprika
  • 1 tsp. salt

Instructions

  1. Season the chicken with paprika and 1/2 teaspoon salt.
  2. Saute the chicken in butter until browned.
  3. Remove the chicken from the skillet and set aside.
  4. In the remaining butter, blend flour, sugar, allspice, cinnamon, dry mustard, and 1/2 teaspoon salt.
  5. Drain the cherries, reserving the liquid, and pour the liquid into the skillet.
  6. Return the chicken to the skillet.
  7. Add crushed pineapple, rum or rum extract, chicken bouillon cube, and red food coloring.
  8. Cover and simmer for 30 minutes.
  9. Add the cherries and simmer for an additional 10 minutes.
