Ingredients

  • 1/2 cup butter or margarine
  • 2 cloves garlic, crushed
  • 1/2 cup flour
  • 1 teaspoon salt
  • 2 cups milk
  • 2 cups chicken broth
  • 2 cups shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, chopped
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon pepper
  • uncooked lasagne noodles
  • 2 cups creamed cottage cheese
  • 2 cups cooked chicken, cut up
  • 2 packages frozen chopped spinach, thawed and drained

Instructions

  1. Melt butter over low heat in a 2-quart saucepan. Add crushed garlic and stir.
  2. Stir in flour and salt, cook until bubbly, then remove from heat.
  3. Stir in milk and chicken broth.
  4. Heat to boiling, stirring constantly.
  5. Boil and stir for 1 minute, then add shredded Mozzarella cheese, grated Parmesan cheese, chopped onion, Italian seasoning, and pepper. Cook and stir until cheese melts.
  6. Spread 1/4 of the cheese sauce (about 1 1/2 cups) in an ungreased 9 x 13 x 2-inch baking dish.
  7. Top with 3 or 4 uncooked lasagne noodles, overlapping if necessary.
  8. Spread half of the creamed cottage cheese over the noodles.
  9. Repeat with another 1/4 of the sauce, 3 or 4 noodles, and remaining cottage cheese.
  10. Top with cooked chicken, thawed and drained chopped spinach, remaining 1/4 of the cheese sauce, and another layer of noodles.
  11. Pour the remaining cheese sauce over the top.
  12. Sprinkle the rest of the grated Parmesan cheese over all.
  13. Bake uncovered at 350°F for 35 to 40 minutes.
  14. Let stand for 15 minutes before cutting and serving.
