Ingredients

  • 4 boneless chicken breasts
  • 1 lb. mushrooms, sliced
  • 1 whole white onion, chopped
  • 1 can artichoke hearts, sliced
  • 3 Tbsp. olive oil
  • 1/2 c. Marsala wine
  • flour
  • granulated garlic
  • salt
  • pepper

Instructions

  1. Season the chicken breasts with granulated garlic, salt, and pepper, then dredge them in flour.
  2. Heat 3 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side. Remove and set aside.
  4. In the same skillet, add the chopped onion and sliced mushrooms. Cook until the onion is translucent and mushrooms are browned.
  5. Add the sliced artichoke hearts to the skillet and cook for another 2-3 minutes.
  6. Pour in the Marsala wine to deglaze the pan, scraping up any browned bits from the bottom.
  7. Add the chicken stock to the skillet and bring to a simmer.
  8. Return the chicken breasts to the skillet, cover, and cook for an additional 15-20 minutes until the chicken is cooked through and flavors melded.
