  • 1/4 c. flour
  • 1 c. milk
  • 1/2 c. fine bread crumbs
  • 1 Tbsp. finely chopped parsley
  • 1 tsp. poultry seasoning
  • 1 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. In a medium to large saucepan, melt 1/4 stick of margarine and stir in 1/4 cup flour until smooth.
  2. Add 1 cup milk and stir at a low boil until thickened and leaves sides of pan (about 2 minutes).
  3. Remove pan from burner.

  5. Blend well and refrigerate for at least 1 hour.

Tips & Substitutions

For a crispier texture, consider adding some grated Parmesan cheese to the bread crumbs before coating the croquettes. If you need a gluten-free option, substitute the flour with a gluten-free blend and use gluten-free bread crumbs. Fresh herbs like thyme or chives can be used in place of parsley for a different flavor profile.

Serving Suggestions

These chicken croquettes are delicious served with a side of spicy aioli or honey mustard for dipping. They pair well with a light salad or steamed vegetables, such as green beans or a Rice Broccoli Dish. For a heartier meal, consider serving them alongside a creamy Super Squash Casserole.

Storage & Reheating

Store leftover croquettes in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10-15 minutes, until heated through and crispy again. Avoid microwaving, as this can make them soggy.

Frequently Asked Questions

Can I freeze chicken croquettes?

Yes, you can freeze uncooked croquettes. After mixing the ingredients and chilling, shape them and place them on a baking sheet. Freeze until solid, then transfer to a freezer bag. When ready to cook, fry them straight from the freezer, adding a few extra minutes to the cooking time.

What can I use instead of chicken?

For a vegetarian alternative, consider using finely chopped mushrooms or cooked quinoa mixed with vegetables. You can also use shredded turkey or canned tuna if you want a different protein source. Adjust the seasonings to complement the new ingredient.

How do I know when the croquettes are done cooking?

Croquettes are done when they are golden brown on the outside and heated through in the center. You can check by inserting a thermometer; the internal temperature should reach at least 165°F (74°C). They should also feel firm and not mushy when gently pressed.
