Ingredients

  • 2 lb. boneless chicken breast
  • 2 c. mayonnaise
  • 2 c. half and half cream
  • 2 Tbsp. chopped onions
  • 1 lb. sliced mushrooms
  • 4 hard-boiled eggs
  • 1 package Pepperidge Farm stuffing mix

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine mayonnaise, half and half cream, chopped onions, sliced mushrooms, and chopped hard-boiled eggs.
  3. Add the cooked and shredded or diced chicken breast (or shrimp/crab meat as an alternative) to the mixture.
  4. Mix in the entire package of Pepperidge Farm stuffing mix until well combined.
  5. Transfer the mixture to a greased baking dish.
  6. Bake in the preheated oven for about 40 minutes, or until heated through and golden on top.
  7. Serve hot and enjoy.
