Chicken Escalopes
Tender chicken escalopes coated with sage breadcrumbs, fried to golden perfection, and served with a creamy horseradish-yogurt sauce garnished with lemon and walnuts. Elegant and flavorful.

- Pat the chicken breasts dry with paper towels.
- Whisk the egg whites with a fork until they just begin to froth, then brush all surfaces of the chicken with the egg whites.
- Put bread crumbs on a plate and mix in the chopped sage.
- Season the bread crumbs with a little salt and ground black pepper.
- Place the chicken, one at a time, into the plate of bread crumbs and sage, and carefully press the mixture onto the surface of each chicken breast.
- Pour the walnut oil into a large shallow pan and gently fry the prepared chicken on each side for 5 minutes until lightly golden and tender. Set aside and keep warm.
- In a small bowl, mix the low-calorie mayonnaise, natural yogurt, grated fresh horseradish, and chopped walnuts, whisking well to blend.
- Place the cooked chicken on a serving dish and spoon a little of the sauce over each piece.
- Garnish with lemon slices and additional chopped walnuts before serving.
