Ingredients

  • 16 oz. can tomatoes
  • 1/2 green pepper, chopped
  • 1 Tbsp. hot salsa
  • dash of cayenne pepper
  • 1 tsp. sweet basil
  • 1 can tomato paste
  • 1 1/2 cups water
  • 2 Tbsp. vinegar
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • salt and pepper to taste
  • 1/2 tsp. yellow mustard
  • 3/4 lb. chicken breast, diced
  • 1 can pineapple chunks, drained
  • 1/4 cup white wine

Instructions

  1. Put olive oil in a frying pan.
  2. Sauté the chopped onion, chopped green pepper, and crushed garlic until fragrant.
  3. Add the remaining ingredients (tomatoes, tomato paste, water or vinegar, hot salsa, cayenne pepper, basil, chicken, pineapple chunks, white wine, chicken broth, yellow mustard, salt, and pepper).
  4. Cook over low heat, stirring occasionally, for a couple of hours.
  5. Add pineapple chunks 5 minutes before serving.
  6. Serve over rice or pasta.
