Chicken Glop
A hearty chicken and tomato dish infused with sweet pineapple, basil, and spicy salsa, perfect for comforting family dinners with vibrant flavors.
Ingredients
- 16 oz. can tomatoes ⓘ
- 1/2 green pepper, chopped ⓘ
- 1 Tbsp. hot salsa ⓘ
- dash of cayenne pepper ⓘ
- 1 tsp. sweet basil ⓘ
- 1 can tomato paste ⓘ
- 1 1/2 cups water ⓘ
- 2 Tbsp. vinegar
- 1 medium onion, chopped ⓘ
- 2 cloves garlic, crushed ⓘ
- salt and pepper to taste ⓘ
- 1/2 tsp. yellow mustard ⓘ
- 3/4 lb. chicken breast, diced ⓘ
- 1 can pineapple chunks, drained ⓘ
- 1/4 cup white wine ⓘ
Instructions
- Put olive oil in a frying pan.
- Sauté the chopped onion, chopped green pepper, and crushed garlic until fragrant.
- Add the remaining ingredients (tomatoes, tomato paste, water or vinegar, hot salsa, cayenne pepper, basil, chicken, pineapple chunks, white wine, chicken broth, yellow mustard, salt, and pepper).
- Cook over low heat, stirring occasionally, for a couple of hours.
- Add pineapple chunks 5 minutes before serving.
- Serve over rice or pasta.
