Ingredients

  • 2 lb. boneless chicken
  • 1 clove garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 (8 oz.) can bamboo shoots
  • 1 (8 oz.) can sliced mushrooms
  • 1 carrot
  • 1 bunch watercress
  • 1/2 c. sugar
  • 1/4 c. shoyu

Instructions

  1. In a skillet, brown the chicken with crushed garlic.
  2. Add salt and pepper, then add bamboo shoots and sliced mushrooms, including their liquid.
  3. Add sliced carrots and simmer for 3 minutes.
  4. Stir in sugar and shoyu, then simmer for an additional 3 minutes.
  5. Add sliced watercress and green onions, cooking until desired tenderness or crispness is achieved.
  6. Season to taste and serve.
