Ingredients

  • 1 broiler fryer
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • dash of pepper
  • 1/2 cup chopped onion
  • oil for frying
  • 1 ounce jar peach preserves
  • 1/4 cup barbecue sauce
  • 6 ounce can water chestnuts, drained and sliced
  • 2 tablespoon soy sauce

Instructions

  1. Cut the chicken into chunks. Coat with flour, salt, and pepper, then brown in hot oil.
  2. Combine peach preserves, barbecue sauce, chopped onion, and soy sauce; pour over the browned chicken.
  3. Cover and simmer for 40 minutes, adding water chestnuts during the last 10 minutes.
  4. Serve the chicken on a bed of hot rice.
