  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup chopped parsley or 2 tablespoons dried
  • 1/2 pound butter or margarine

  2. Soften up garlic clove by mashing to paste by sprinkling salt on and mashing to paste.
  3. Put mashed garlic in a bowl with bread crumbs.
  4. Add Parmesan cheese, parsley, salt, and pepper to the bowl.
  5. Toss the mixture very well.
  6. Melt butter.
  7. Place chicken pieces in a bowl.
  8. Pour melted butter over the chicken.
  9. Cover each piece well in melted butter.
  10. Coat each piece of chicken with the crumb mixture and place in a single layer, skin side up, on a flat roasting pan.
  11. Drizzle additional butter over each piece.
  12. Put into a preheated 350° oven for 1 hour.
