Chicken Italia
A vibrant chicken and rice dish with fresh vegetables, herbs, and a lemony flavor, perfect for a quick, wholesome meal suited for family dinners or entertaining guests.
Ingredients
- 1 lb boneless chicken breasts, skinned ⓘ
- 1 medium onion, chopped ⓘ
- 2 Tbsp butter ⓘ
- 1 small zucchini, cut into strips ⓘ
- 1 clove garlic, finely minced ⓘ
- 1 1/2 cups chicken broth ⓘ
- 1 Tbsp lemon juice ⓘ
- 1/2 tsp basil leaves ⓘ
- 1/4 tsp salt ⓘ
- dash of pepper ⓘ
- 1 1/2 cups dry Minute rice ⓘ
- 8 cherry tomatoes, halved ⓘ
- 2 Tbsp chopped parsley ⓘ
Instructions
- Saute chicken and onion in butter until well browned.
- Add zucchini and garlic; cook for 1 minute, then add broth, lemon juice, basil, salt, and pepper.
- Bring to a full boil.
- Stir in rice and add cherry tomatoes.
- Cover and remove from heat.
- Let stand for 5 minutes.
- Fluff with a fork and garnish with chopped parsley.
