Ingredients

  • 1/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1 can Ro-Tel tomatoes
  • 4 oz can mushrooms
  • 1 cup boiling water
  • 1 packet Weight Watchers chicken gravy mix or 1 can cream of chicken soup
  • 2 cups cooked thin spaghetti
  • 1/4 cup chopped bell pepper
  • 2 teaspoons vegetable oil

Instructions

  1. Saute chopped onion, bell pepper, and celery in vegetable oil.
  2. Add the gravy mixture, mushrooms, and diced tomatoes to the sautéed vegetables.
  3. Stir in cooked chopped chicken and cheese.
  4. Layer the mixture with cooked spaghetti in an 8 x 8-inch Pyrex dish sprayed with Pam.
  5. Cover and bake at 400°F for 25 minutes or until bubbly.
