Juicy chicken livers cooked in a rich mushroom and wine sauce, accented with herbs and mustard, perfect for hearty, flavorful meals served over rice.

Ingredients

  • 1 lb chicken livers
  • 1/4 cup butter
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 4 cups sliced mushrooms
  • 1/2 cup dry white wine
  • 1/4 cup water
  • 1/4 cup chopped parsley
  • 2 teaspoons flour
  • 1 chicken bouillon cube
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon crumbled rosemary

Instructions

  1. Saute chicken livers in 3 tablespoons of butter until brown, about 5 minutes.
  2. Remove the livers from the skillet and set aside.
  3. Saute diced onion and minced garlic until soft.
  4. Add sliced mushrooms and saute lightly.
  5. Stir in white wine, water, chopped parsley, flour, chicken bouillon cube, Dijon mustard, and crumbled rosemary until blended.
  6. Simmer for 5 to 10 minutes until the sauce thickens.
  7. Return the chicken livers to the skillet and simmer for 5 minutes longer.
  8. Serve hot with fluffy rice.
