A hearty chicken noodle casserole with creamy mushroom and chicken soups, flavorful vegetables, and melted cheese, perfect for cozy family dinners or meal prep.

Ingredients

  • 1 fryer or 4-5 chicken breasts, boiled
  • 1 stick oleo
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 cup chicken broth
  • 1 4 oz can mushrooms, stems and pieces
  • 1 can Cream of Chicken soup
  • 1 can Cream of Mushroom soup
  • 1 1/2 cups Jalapeno Pepper Cheese log or 1 cup grated cheddar cheese
  • 1/2 package thin noodles, cooked

Instructions

  1. Saute onion, celery, bell pepper, and mushrooms in oleo.
  2. Cut boiled chicken into large pieces.
  3. Sprinkle chicken with lemon juice.
  4. Add vegetables and 1 cup of chicken broth to the soups.
  5. Heat the mixture but do not boil.
  6. Fold in cheese, cooked noodles, chicken, and Worcestershire sauce.
  7. Pour into casseroles and bake at 325°F for 30-35 minutes.
  8. Casseroles can be frozen and baked later.
