Ingredients

  • 4 Tbsp. olive oil
  • 1/2 white onion
  • 5 cloves garlic
  • 1/2 c. sun-dried tomatoes packed in olive oil
  • 1/2 c. pine nuts
  • 3/4 c. chicken breast
  • 1/4 c. brandy
  • 28 oz. can of Italian style peeled tomatoes
  • 1/4 c. fresh chopped basil
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. chicken stock
  • 1/4 c. whipping cream
  • 1 lb. penne pasta
  • 1/2 c. grated Parmesan cheese

Instructions

  1. Drain and chop the canned peeled tomatoes, reserving the juices separately.
  2. Add olive oil, chopped onion, sliced garlic, sun-dried tomatoes, pine nuts, and diced chicken to a non-stick sauté pan.
  3. Cook for 4 minutes over medium-high heat until garlic starts to brown.
  4. Add brandy, stir well, and cook for 2 minutes.
  5. Add chopped tomatoes and chopped basil, cook for 2 more minutes while stirring.
  6. Pour in chicken stock, reserved tomato juice, and whipping cream.
  7. Bring to a boil and simmer for 20 minutes.
  8. While the sauce simmers, cook the penne pasta according to package instructions.
  9. Drain the pasta and return it to the pot.
  10. Pour the sauce over the pasta and stir until well combined over low heat.
  11. Add grated Parmesan cheese, stir, and serve.
