Ingredients

  • 2 Tbsp. olive oil
  • 1 lb. chicken pieces
  • 1 c. mushrooms, sliced
  • 1/4 c. onion, chopped
  • 2 Tbsp. sherry
  • 1 can chicken soup
  • 1/2 c. peppers, sliced
  • 1/2 c. Parmesan cheese

Instructions

  1. Brown the chicken pieces in olive oil, then remove and set aside.
  2. In the same pan, sauté the sliced mushrooms and chopped onion until softened.
  3. Add sherry and the can of chicken soup, stirring to combine and heat through.
  4. Return the chicken to the pan, add sliced peppers, cover, and simmer for 10 minutes, stirring occasionally.
  5. Stir in the grated Parmesan cheese until melted, then serve the sauce over cooked noodles.
