Ingredients

  • 6 to 10 lb. hen
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 2 tsp. salt
  • 1 Tbsp. pepper
  • 2 to 3 cups raw rice
  • 3 small cans mushrooms, sliced and browned
  • coarsely ground black pepper

Instructions

  1. Cook the hen with chopped celery, bay leaves, salt, pepper, and enough water to cover until the chicken is tender and falling from the bones.
  2. Remove the cooked chicken from the broth; set aside.
  3. Prepare rice and mushrooms separately.
  4. Combine cooked ingredients as desired and serve.
